Cheeky Rascals

German: Spitzbuben

  1. The world's yummiest cookie!

  2. Whisk soft butter, powdered sugar, vanilla sugar and egg yolks until light and frothy
  3. Add almonds and flour
  4. Straightaway knead to a smooth dough
  5. Wrap in plastic wrap and everything goes into the refrigerator (for 60 minutes)

  6. Pre heat the oven, 350F (325F fan assisted)
  7. Line baking sheets with baking paper
  8. Flour work surface
  9. Roll out dough thinly (1/6 inch)
  10. Cut out 1 inch circles
  11. Take half the circles and cut out a smaller circle (or heart or star shape) in the middle to create rings

  12. Bake on middle shelf for 8 - 12 minutes until very lightly golden
  13. Remove cookies on baking paper from baking sheet and allow to cool
  14. Dust the cookie rings with powdered sugar
  15. Mix raspberry jam with raspberry brandy
  16. Spread the jam mixture over the cookie circles
  17. Put one dusted cookie ring on each of the cookie circles

  18. Leave cookies to set, then off they go into the cookie tin. Enjoy them after at least 3 weeks

Roll out dough thinly and cut out 1 inch circles 
Dust the cookie rings with powdered sugar 
Spread the jam mixture over the cookie circles and ut one dusted cookie ring on each of the cookie circles
